With a little help from our BWB friends, we were able to discover a few companies that provide snacks that are both nutritious and flavorful.
How many of you admit to the guilty pleasure of nibbling on your children’s snacks? We all sneak bites of those tasty morsels because prepackaged kid’s treats are most always irresistibly delicious. All of their mouthwatering appeal, however, results from the salt, sugar, and other highly appetizing, but seriously unhealthy ingredients that they often include. Fortunately, with a little help from our BWB friends, we were able to discover a few companies that provide snacks that are both nutritious and flavorful. And, as an added bonus, we are including a quick, easy, vegetable filled recipe for those of you that also enjoy cooking snacks, not just eating them.

Cheesy Zucchini Cornbread Muffins
What’s better than cornbread? You guessed it: cheesy cornbread with zucchini! These are a deliciously addictive, quick, easy and a healthy twist on store-bought cornbread mix. They are perfect for a lunch box or a snack on the go.
Makes: 10-12 muffins • prep time: 5mn • cook time: 18-20 mn
- 1 large grated zucchini
- 1 cup of grated cheese of your choice
- 1 box of good quality cornbread mix (I used Stonewall with great results)
- PLUS the ingredients listed on the box (usually egg, oil, and milk)
How it’s made:
- Warm up the oven to 400ºF.
- Prepare the cornbread batter as instructed on the box.
- Mix in the grated zucchini and cheese.
- Add a pinch of salt and a pinch of black pepper.
- Divide the mix in a greased baking dish.
- You can make a square or rectangular loaf, muffins, or mini cornbreads.
- Bake following the directions on the box but add 2-3 minutes.
- The zucchini adds a lot of moisture to the batter, and you will need to add that extra cooking time.
- Once they’re nicely golden, press lightly on the cornbread to check for doneness. If they feel firm, they’re ready.
