Quinoa Salad with Dried Apricots

Quinoa can be prepared in many different ways. Here is an easy and quick quinoa recipe for a mild and slightly sweet dish.

Ingredients for 4 servings

  • 1 cup of quinoa and 2 cups of water
  • 1 large tomato
  • 1 cucumber
  • 1 handful of dried white raisins
  • 6 dried apricots
  • 1 lime
  • Olive oil
  • Soy sauce
  • Salt


Directions

  • Cook the quinoa according to instructions on package. Hint: keep it covered during the entire cooking process.
  • Dice the tomato and the cucumber.
  • Rinse the dried apricots and dry them thoroughly. Cut them into small pieces.
  • Rinse and dry the dried raisins.
  • When the quinoa is cooked, take the quinoa off the stove and add raisins and apricots. Mix and let rest for a few minutes.
  • Pour in a serving bowl.

For the dressing

  • 5 TBS of olive oil.
  • 2 TBS of soy sauce.
  • The juice of one lime.
  • Option: a pinch of salt, fresh coriander or parsley, diced onion.
